Bring a large pot of salted water to a boil. Cook the penne according to the package instructions until al dente. Reserve 150 ml of pasta water, then drain.

While the pasta cooks, heat the olive oil in a large pan over medium heat.

Add the sliced garlic and chili flakes. Cook for 1–2 minutes, until the garlic is fragrant but not browned.

Add the canned tomatoes, salt, pepper, and oregano. Break up the tomatoes with a wooden spoon.

Simmer the sauce for 12–15 minutes, stirring occasionally, until slightly thickened.

Add the cooked penne to the sauce along with a splash of reserved pasta water. Toss everything together for 1–2 minutes until the sauce coats the pasta.
